Miso baked butternut squash

Serves 2

Ingredients (for the marinade)

Cupboard:

1 tbs • Miso paste

1 tbs • Maple syrup

1 tbs • Soy sauce

Fresh

1 • butternut squash

1 • handful of coriander


Prep

  1. Preheat oven to 180 degrees

  2. Mix all marinade ingredients into a paste

  3. Cut butternut squash in half and remove seeds

  4. Brush marinade onto the squash

Cooking

  1. Bake squash in oven for 35 mins

  2. Garnish with coriander

  3. Serve
